Kimchi Mandu (Potstickers or Dumplings or Wonton?)  

Ingredients:

1 ½ cups of all- purpose flour, 1 tsp of salt, ground pork 4 oz, 2 cups of chopped kimchi (if you like you can use chopped Chinese scallion 3 oz to make plain mandu), finely crushed ½ tofu, 2 green onions, 1 egg, 1 tsp of sesame seed oil

Directions:

1. Add salt and a little bit of water to make soft dough, and cover the dough with wet cloth. (If you are afraid of making the dough, buy ready-made dumpling wraps. They are sold in any Asian market.) 

2.  Squeeze out water from chopped kimchi.  In a large bowl, add chopped kimchi, crushed tofu, chopped green onions, ground pork, egg and mix well. 

3.  Flatten dough to 1/8 inch thickness and use a bowl (about 4 inch circle) to cut circular wraps.  (use the bowl like a cookie cutter, and if you have a better idea, use it.) When you make dough flatten, don’t hesitate to sprinkle flour to make it non-stick. 

4. Now the fun part (or not so fun part): Put a circular wrap on your left palm, and put about 1-2 Tbs of mixture on it.  You can wrap the way you like.  Tip:  Use your finger to put water at the edge of wrap to stick together.  Place made mandu on a flour sprinkled place. 

What you can do with mandu :  make mandu soup(dumpling soup)fried mandu (Fried dumpling) or simply boil them in a pot and dip lightly  into soy sauce.
