Sayap Ayam

(Barbecued Chicken wings)

8-10 Chicken wings - washed

1.5 tbsp dark soya sauce

1tsp sugar

salt to taste

Grind coarsely:

2 cloves garlic

4 red chillies

4 shallots

2 heaped tsp shredded ginger

1 tsp coriander powder

1 tsp cumin powder

Marinate chicken wings with all the above ingredients for 6-8 hours. Brush with oil and grill

 
  Mango Pudding

250 ml fresh mango juice

2 tbsp sugar

185 ml evaporated milk

1.5 tbsp gelatine powder

5 tbsp hot water

1 egg white, whisked till stiff

Dissolve the gelatine and sugar in hot water.

Add the mango juice and evaporated milk. Leave to cool.

Just as the jelly is about to set, fold in the egg white.

Pour into a mould and refrigerate.

Lassi (Indian Yoghurt Drink)

8 tbsp yoghurt

4 tbsp sugar

2 cups water

pinch of salt

Put all the above in a liquidiser for a couple of minutes. Add ice chips and serve cold.

 
  Potato Curry

1 pound potatoes wedges

1 tsp coriander powder

1/2 tsp chillie powder

1 large tomato chopped

1 onion chopped

1 cup water

salt

oil

Heat oil, add potatoes and stir fry. Add all dry ingredients, tomato, onion and when fragrant, add water, salt and cook till gravy is thick.

Mango Sorbet

3 ripe mangoes, peel and stone

50g icing sugar

30mil (2tbsps) kirsch

3 medium egg whites

Process mangoes till smooth and add icing sugar and 300ml boiling water. Blend till smooth. Pour into container, stir in another 600ml boiling water and kirsch and cool. Freeze for 1.5 hours until semi frozen. Whisk egg whites until stiff and fold into the mango mixture and freeze for another hour. Whisk with fork until whites are mixed well. Freeze till firm.
