Breakfast Burritos



Breakfast is the most important meal of the day, so they say, or at least the first meal if you are counting. The traditional American breakfast of fried eggs, bacon and buttered toast is bad enough for you to rate inclusion here but it's boring and you already know how to make it anyway. Start your day with a little pizzazz with these. Makes 4, enough for two normal people or one pig:


Ingredients


4 Warmed Flour Tortillas
4 eggs
1 cup Hot Dog Chili heated
1 cup chopped onions, red and/or green bell peppers and chile peppers
(Chiles to taste but remember that everything else is bland)
1 cup grated sharp cheddar cheese
1 fresh tomato seeded and chopped
1 tsp each cayenne pepper powder, garlic powder, and grated black pepper
1 tblsp each butter and olive oil
Your favorite Hot Sauce
Salt to taste

Preparation


Break the eggs in a bowl and add the cayenne, garlic powder, pepper and salt. Whip but don't homogenize. In a large skillet at medium heat melt the butter in the olive oil. Add the egg mixture and, as it starts to cook, stir a little to give it some consistency and then let it settle. Cook until set.

Lay out the tortillas on warm plates and place a quarter of the egg mix in the upper left quadrant. Top with (in order) the chili, the onions & peppers, the tomato and the grated cheese.

Fold the tortillas (left, then bottom then right) and pin with a toothpick if necessary to hold the shape.

Top with a shot of Hot Sauce and serve on the warmed plates with chunks of fresh fruit.
