Yeah well...tuna salad is pretty boring. It's for little kid's lunch boxes and brown bagging on Friday. Doesn't have to be that way though.
1 can Chunk Light (not white) Tuna
(water pack, well drained)
1 small Onion, chopped
1 Jalapeno Pepper seeded & chopped
1 Tblsp Chopped Dill Pickle
(or Substitute 1/2 Tsp Lemon Juice)
1 Tblsp Chopped Black Olives
1/2 Tsp Garlic Powder
1/2 Tsp Cayenne Pepper Powder
3 Tblsp Mayonnaise
Salt and Freshly ground Black Pepper to taste
Mix the garlic powder, cayenne, salt and pepper with the mayonnaise. Mix in the other ingredients. (Boy, that was hard!) You can adjust consistency by adding or subtracting Mayonnaise. Mix just enough to spread the ingredients evenly. Try not to make a paste of it...the tuna should be a little chunky.
Serve on a toasted hard rolls (or better yet, onion rolls) with a slice of fresh tomato, a slice of Provolone Cheese and Lettuce. Garlic Dill Pickle on the side. Makes an interesting taco too...topped with chopped tomatoes, shredded lettuce and melted cheddar cheese.
