Kahlua Liqueur

4 oz. instant coffee powder or crystals
8 cups sugar
4 cups of boiling water

Mix the above ingredients and let them cool to room temperature.

1 3/4 liters of vodka
1 vanilla bean, cut in half

Combine coffee mixture, vodka and vanilla bean in a gallon jar or bottle. Age for 30 days in a cool place. Makes one gallon that will keep for 6 months to 2 years. (For an even stronger coffe flavor add 8-12 whole coffe beans with the vodka and vanilla bean. Age for 3 months then dicard the coffee beans.)



Irish Cream

4 fresh eggs
1 can Eagle brand sweetened condensed milk
1 cup of Irish Whiskey
3 tsp instant coffee powder
1 tsp of coconut extract
1 tsp of chocolate extract

Beat eggs thoroughly and add milk. Dissplve coffee powder in whiskey and then add to egg mixture. Add extracts. Keep refrigerated. Let age for 2 days. Keeps for about one month. Makes 1 quart.



Blueberry Cordial

4 cups fresh blueberries
2 cups 100-proof vodka
1/2 cup water
1 cup sugar
1/2 tsp. whole cloves
1/2 tsp. whole coriander seeds

Crush or mash berries in a glass jar. Add vodka, water, whole cloves and whole coriander seeds. Cover. Let stand in a dark place for 10 days, shaking daily. Mixture should be a dark blue-black color. Carefully strain mixture. Add sugar and shake until dissolved. Wait 24 hours and pour mixture through a clean cloth. Let rest until clear.



Curacao

4 oranges
1 cup honey
3 cups 80-proof Bourbon

Remove outer peel from the oranges without any white pith. Steep peel in bourbon for one month, shaking daily and store in a dark place. Strain and add honey. Let stand until clear.



Peach Cordial

9 small fresh peaches
1 1/2 cups sugar
1/2 cup honey
3 cups 80-proof vodka

Peel and cut peaches into small pieces. Put in a glass jar with the vodka. Marinate for 1 week, shaking jar periodically. Strain and add sugar and honey. Stir well. Let sit until clear.



Raspberry Cordial

1 lb. raspberries
8 oz. sugar
3 cups 80-proof vodka

Crush berries, cover overnight. Bring to a boil, remove from heat. Strain and let cool. Carefully pour off 1 3/4 cups juice. Add sugar and stir to dissolve. Blend in vodka and leave until clear.




Frozen Berry Liqueurs

When fresh berries are unavailable, one can use frozen berries instead of fresh. I suggest experimenting with a 10-ounce package of any berry and making small batches.

1 10-ounce package of any berry
1 1/2 cups vodka or 1 cup vodka and 1/2 cup brandy
1/4 cup sugar syrup

Add juice and berries to the alcohol. Stir and steep for one week. Crush berries through a strainer and filter. Taste. Add sugar syrup as necessary, since many frozen berries are already heavily pre-sugared.
