"Precious" Casseroles and Soups



John Wayne Casserole

1 T. Flour
1/2 t. salt
1/2 t. pepper
2-4 oz. can chopped green chiles
1 lb. jack chesse (grated)
1 lb. cheddar chesse (grated)
2/3 C. evaporated milk
4 egg whites
4 egg yolks

Mix chilis and cheese in a buttered 2qt. 9x13" baking dish. Beat egg whites till stiff. Beat egg yolks and rest of ingredients together and fold into egg whites. Pour over chile and cheese mixture and use fork to work into cheese. Bake at 350 degrees for 1 hour or till fork comes out clean. Optional: Put sliced tomatoes or parsley on top the last 30 minutes of cooking. Cut into squares and serve. Can serve approx. 10 adults.



King's Ranch Chicken

1 whole chicken, cooked and deboned
1 medium onion
1 medium bell pepper
2 cans cream of mushroom soup
2 cans cream of chicken soup
1 can rotel
2 cups shredded cheese
1 tablespoon margarine
12 corn tortillas

Saute` onions and bell peppers in margarine until tender. Mix soups and rotel in mixing bowl. Mix well. Add chicken. In a baking pan layer 6 tortillas then top with chicken mixture then add 1/2 cheese on top of that. Repeat the step above. Then bake in 350 degree oven for 1 hour. Serves 8.



Very Vegetable Casserole

1 - 14 oz. can cream of celery soup, undiluted
2cups frozen green beans
2 cups frozen white corn
1 cup celery, chopped
1/2 cup onion, chopped
1/3 cup sour cream
1/2 cheddar cheese, shredded
1/2 cup corn flakes

Combine all ingredients except corn flakes in a casserole dish and sprinkle corn flakes on top. Bake at 350 degrees for 30-40 minutes.
