Southwestern Chicken and Rice

4 boneless chicken breasts
1 pkg taco seasoning mix
1 cup chunky salsa
2 cups 5 minute rice
2 cups shredded cheese
1 can ranch style beans
3 cups water

Mix the water, taco seasoning, salsa, and chicken in large cooking pot. Cook on a medium flame until chicken is done. Add rice and beans and cook for 5 minutes. Then add cheese. Mix until cheese is melted. Wonderful! and easy.



Chicken with Spicy Orange Sauce

8 boneless chicken breasts
1 cup orange juice
2 Tbsp. grated orange rind
1/3 cup olive oil
1/3 cup vinegar
1/4 cup dried chiles
2 cloves garlic
1 tsp. cinnamon
1 Tbsp. sugar
1/2 tsp. salt
1/2 tsp. cayenne pepper

Combine all ingredients except chicken in a blender or food processor until smooth. Place chicken in a large baking dish and pour sauce over chicken. Bake at 350 degrees for 45 minutes or until chicken is fully cooked. If you do not wish to have this recipe spicy you may omit the chiles and the cayenne pepper



Clam Chowder

1/2 pound of bacon, fried and cut in pieces
2 tsp. bacon drippings
8 small potatoes cut up in chunks (we leave on the peel)
1 pint fresh clams with liquor (juice) cut in small pieces
1 medium onion, cut up
2 celery stalks, cut in small pieces
4 and 1/2 cups of water
2 - 8 oz. bottles of clam juice
salt and fresh ground pepper

In a large pot, cook onions in bacon drippings. Add all other ingredients to pot and heat to a boil. Reduce heat and simmer for 50 minutes or until potatoes are tender.



Lamb Chops with Mint Sauce

8 Lamb chops
1/4 cup butter
4 cloves garlic, minced
1 onion, chopped
2 Tbsp. mint sauce (recipe to follow)
1/4 cup fresh mint, coarsely chopped
1 cup white wine
Marinate chops in olive oil and garlic for 3-4 hours. Melt butter in a large skillet and add chops. Brown on both sides. Add onion, wine, mint sauce and mint. Cook for 25-30 minute. You may use store bought mint sauce or you can make your own. To make your own, simply take 3 Tbsp. fresh mint chopped, 1/4 cup balsamic vinegar, 1 Tbsp. sugar and 1 Tbsp. dry sherry (optional). Whisk together and adjust sugar or vinegar as needed to suit your taste. Serve lamb with extra mint sauce or mint jelly if you prefer something sweeter.
