| As I'm new to the Dhaba business, I'll be keeping my menu short and simple with bandwidth hogging funkiness! My Travels so far Information on where I've been and would like to go. | Dhaba's are simple roadside joints in India where folks hang out, have some 'Chai' (Indian tea), and get a bite to eat along their journey. Each Dhaba has it's 'speciality' dish and share of eccentric regulars (kinda like the Indian version of Cheers). Some Dhaba's cater to truckers and are open 24/7 (i.e. the owner/waiter/dishwasher sleeps in the kitchen/restaraunt and is woken up by the customer). Many of the new Dhaba's offer seating on chairs and tables instead of the traditional 'manji' (a bed, often outdoors and used as a seating area during the day). I have always preferred the manji... as you can eat to your heart's content and then lie down under the warm afternoon sun and allow the rhythm of the road to drift you away till the Dhaba owner wakes you up to a shot of Chai (often called the 100 mile Chai... as the strong potency of the tea will allow a trucker to drive a 100 miles without feeling the least bit tired).
