This recipe only takes about 45 minutes to prepare and cook. It goes great with Tomatoes Provencal.
Ingredients
- 1/3 cup olive oil
- 3 Tb fresh lemon juice
- 3Tb chopped fresh basil
- 1 clove garlic, crushed through press
- 1/2 tsp. grated lemon zest (colored part of peel)
- Salt
- 1/8 tsp. freshly ground peper
- 2 boneless chicken breasts, split
- 1 cup small pasta bows or tiny shells
** I suggest you cook 2-3 cups of pasta and when you add the pasta to the dressing, add only as much as you want.
Directions
- Heat medium pot of water to boiling for pasta.
- Prepare charcoal for grilling or heat broiler.
- Whisk oil, lemon juice, 1 Tb. basil, the garlic, lemon zest, 1/2 tsp. salt, and the pepper together in medium mixing bowl.
- Measure 2 Tb. of the dressing and brush over all sides of chicken. Wrap chicken in plastic wrap and let marinate in refrigerator at least 20 minutes.
- Salt water, add pasta, and cook until tender but still firm to the bite.
- Drain well and add to remaining dressing. Add remaining basil and toss to coat. Let cool.
- Grill or broil chicken until lightly browned and cooked through, about 3 minutes each side. Serve with pasta.
Serves 4.
