Grilled Chicken Breasts and Pasta Bows with Basil

This recipe only takes about 45 minutes to prepare and cook. It goes great with Tomatoes Provencal.


Ingredients

Directions

  1. Heat medium pot of water to boiling for pasta.
  2. Prepare charcoal for grilling or heat broiler.
  3. Whisk oil, lemon juice, 1 Tb. basil, the garlic, lemon zest, 1/2 tsp. salt, and the pepper together in medium mixing bowl.
  4. Measure 2 Tb. of the dressing and brush over all sides of chicken. Wrap chicken in plastic wrap and let marinate in refrigerator at least 20 minutes.
  5. Salt water, add pasta, and cook until tender but still firm to the bite.
  6. Drain well and add to remaining dressing. Add remaining basil and toss to coat. Let cool.
  7. Grill or broil chicken until lightly browned and cooked through, about 3 minutes each side. Serve with pasta.

Serves 4.
