Lucious Lemon Cheesecake

8 Servings, 4 ww points each (approximately 200 calories)

crust:
1 cup graham cracker crumbs (8 points)
1 Tbsp + 2 tsp melted butter or margerine (5 points)

Filling:
1 pound countainer fo 1% milkfat cottage cheese (6 points)
3/4 cup egg beaters (3 points)
1/2 cup fat free evaporated milk  (2 points)
6 Tbsp sugar (6 points)
1 tbsp grated lemon rind (0 points)
1/3 cup fresh squeezed lemon juice (0 points)
1/4 cup flour (2 points)
(Whole cheesecake is 32 points)

Combine crust ingredients and press evenly into bottom of a 9 inch springform pan.  Put in freezer while you prepare filling.

Place cottage cheese in blender and blend on high speed until smooth.
Add remaining ingredients and blend until thoroughly combined and smooth.
Pour filling into crust and bake in a preheated 300 degree oven for one hour.
Cool completely and chill atleast 2 hours

Can be made up to 2 days in advance in freezes beautifully.

Thank you Christine - I can't wait to try it!!! Yum!! By the way - regular cheese cake is in the weight watchers book as follows -- 1/16th of a 9" cheesecake --- 7 points.  This is a real deal!!

Black bean salad - submitted by Julia McCrone

2 cans black beans
1 can corn kernels
1 1/2 cups celery - chopped
1 1/2 cups red onion, thinly sliced
salsa
cilantro
lime juice

Rinse and drain beans, and add drained corn.  (do not warm or cook). Add chopped veggies, and chopped cilantro, and just a bit of lime juice. (maybe half a Tablespon). Toss with salsa.   Julia adds that when she takes this to work that she adds the salsa when it is time to eat to keep the salad from getting mushy!

Onion Soup - submitted by Julia McCrone

3 pounds onions
2T light margerine
beef boullion
worchesterschire sauce
sourdough bread

Slice the onions very thinly (very important).  melt margerin over low hear and add onions. cook over low heat for 1 - 1 1/2 hours until carmelized, stirring every five minutes. This will make about 3 cups of onions.  For each cup add one cup of broth made from the boullion.  Combine with 1/2 - 1 Tbsp of worchesterschire sauce (to taste)  Julia cuts the sourdough bread into chunks and adds them to her cup of soup.  She suggests freezing the onions in one cup portions so you can make fresh soup whenever you want it. 

                              Low Fat Beef Stroganoff

1 lb thinly sliced beef (may substitute ground beef or turkey)
1 tsp of oil
2 large oinions
1 lb fresh sliced mushrooms
1 clove garlic
salt and pepper to taste
1 can fat free cream of mushroom soup
1/2 can water
8 oz fat free sour cream
1 tsp worchestershire sauce
1 Tbsp Ketchup
1 pkg no yolks egg noodles

*Brown beef strips in oil and add sliced oinions, mushrooms and garlic.  Add salt and pepper to taste. 
*Add can of soup and water then add sour cream.  Cook until hot then add worchestershire sauce and ketchup.
*Cook noodles according to package directions.  Serve over noodles.

                                       Heartly Oatmeal Pancakes

My kids love these -- and so do I!! It is a big batch - but they freeze well and just pop them into the toaster to reheat!!  Try adding 1/2 C diced apples or craisins to the batter.   Try topping with with light margerine (I like Brummel and Brown -- 1 pt/Tbsp!) and powdered sugar or maple syrup!

1.5 C flour
2 C Quick cook oats
2 tsp baking powder
1/2 C brown sugar
2 tsp cinnamon
2 eggs beaten
4 egg whites beaten
1.5 C skim milk

Mix dry ingredients, add wet ingredients.  Let sit for 30 minutes.  Spray griddle / pan with nonstick spray and laddle batter onto griddle.  Batter is thick and you may find it necessary to Spread it just a little bit.   Cook over medium-high heat about 2 minutes per side or until golden brown.   Makes approximately 16  four inch pancakes. 

2.5 WW points per cake
Approximately 130 Calories and 1.5 g fat per cake
