Pumpkin Ginger Scones
I love scones.  They are so easy to make and there are thousands of recipes from sweet scones to savory scones.  These Pumpkin Ginger Scones are my favourite.  I like to make them and eat them in the evenings with unsweetened green tea. 
2 cup All Purpose Flour
7 Tbl + 1tsp Sugar (divided)
2 tsp Baking Powder
1 tsp Cinnamon
1/2 tsp Salt
1/2 tsp Ground Ginger
1/4 tsp Baking Soda
5 Tbl Cold Butter (divided)
1 Egg, lightly beaten
1/4 cup pumpkin
1/4 cup sour cream

In a large bowl, combine the flour, 7 Tbl sugar, baking powder, cinnamon, salt, ginger and baking soda.  Cut in 4 Tbl butter until mixture resembles course crumbs.  Combine the egg, pumpkin and sour cream.  Stir into crumb mixture until just moistened.  Turn onto a floured surface; knead 10 times.  Pat into an 8" circle. Cut into 8 wedges.  Seperate wedges and lay on greased baking sheet.  Brush with melted butter and sprinkle with sugar.  Bake 425 degrees for 15-20 minutes.
