Cakes
                             Rhubarb Cake

  1/2  c  Liquid shortening  (I use vegetable oil)
     1  c  Brown Sugar
  1/2  c  White sugar
     1 ts  Vanilla
     1      Egg
     1  c  Sour Milk
     2  c  Flour  (I use all purpose)
     1  ts Baking Soda
     1  ts Salt  (I don't add)
1 1/2  c  Rhubarb (cut up)
             ------------------------------------------
                              Topping
   1/2  c  White Sugar
     1  ts Cinnamon

Mix in order given.  Put in 9x13 (greased/sprayed) pan.  Mix topping and sprinkle on top.  Bake at 350F for 40 min (aprox)
A few drops of vinegar will sour the milk.

              Blueberry Quick Cheesecake

    8  oz Cream Cheese
    1  pt  Blueberries
    1  ts  Vanilla
    2  pk Dream Whip
    2  tb  Lemon Juice
    1  pk Graham wafer mix
1/2   c  White Sugar

Make graham wafer crust and press into bottom of square dish.  Prepare dream whip in seperate bowl.
In 2nd bowl cream cheese with beaters, add in sugar gradually.  Add lemon juice & vanilla.  Blend cheese mix with dream whip.  Fold in washed blueberries.  Pour onto graham wafer crust with a sprinkle of crumbs on top.

Chill for several hours before serving.

(My family loves this so much, that I usually double the recipe, and use an oblong pan.  (9x13)

             "Ken's Sisters Christmas Cake"

       2  c   flour
       3  c   rolled crackers (salted)
       2  ts  baking powder
       1  c   butter
1 1/2  c   brown sugar
1 1/2  c   white sugar
       6      eggs
       2 tb  Vanilla
       1 ts  allspice
       1 ts  cloves
       1 ts  cinnamon
       1 ts  nutmeg
       1      lemon (grated rind & juice)
       1 c   sour milk (1 1/2 ts soda with milk to       
                                   sour)
       2 lb  raisins (1 large 1 small)
       1 lb  currants
       1 lb  dates
    1/2 lb  mixed peel
    1/2 lb  glazed pinapple
    1/2 lb  glazed cherries
    1/2 lb  nuts (almond, walnut, etc)

Cut mixed fruits & nuts into small pieces.  (Raisins & dates, I soak in boiling water for a few minutes to soften)
Mix everything in a large bowl. 
Put into cake pans that have been lined with wax paper. 
Bake in oven 275-300F for aprox 3 hrs.  (time will depend on size of cake pans used.
This recipe will make the "set of 3 cake pans" (1 lg, 1 md, 1 sm). Again, with this one I switched to using just the smaller cake pans.

  3  c   brown sugar
  4  c   flour
  2  ts  baking soda
  2  ts  cloves
  2  ts  allspice
  2  ts  cinnamon
  2  ts  nutmeg
  1  ts  vanilla extract
  1  c   butter
10      eggs
  3  c   sour cream
  1  c   crisco oil
  1  c   molasses or 1/2 syrup
  1  c   fruit juices
  2  lb  currants
  1  lb  walnuts
  1  lb  mixed peel
  2  lb  glazed cherries
  2  lb  raisins
  2  lb  dates
  1  lb  slivered almonds

Preheat oven to 275F.
Place a tray of water in the bottom of oven. (this helps make the cakes moist) Line bottom of pans with brown or parchment paper.
Cut fruits & nuts into smaller pieces.  Mix all in large bowl.
Put into cake pans or bread pans. (aprox 3/4 full) Bake aprox 3 hrs.
This recipe makes the "set of 3" cake pans. (1 lg, 1 md, 1 sm)  Since I've always found the large cake of any recipe comes out dryer than the smaller ones.  I've always used just the small cake pans.
