Have you ever had a friend hand you a container of "white smelly stuff", and a recipe.....telling you this will make a cake? Ever want to know what else you can do with this "smelly stuff"? The following recipe, I hope will give your taste buds some enjoyment. Also, if you have never had someone hand you a container of "white smelly stuff", I am including a recipe for "the starter". |
Starter 1 c Sugar 1 c Milk 1 c Flour Mix until smooth. Pour starter into plastic container, cover loosely. Do NOT refrigerate. (I just leave mine on the counter) Day 2, 3, and 4: Stir Day 5: Add 1 cup each- flour, sugar & milk. Stir Day 6, 7, 8 & 9: Stir Day 10: Add 1 cup each: flour, sugar & milk. Stir. On day 10..You will now have aprox 6 cups of starter. Measure out 2 cups of starter & put in a plastic container to begin again. To the rest of the starter aprox 4 cups you can now make the "Friendship Cake/Muffin" recipe. |

Friendship Cake / Muffins Day 1 (The day you receive) Pour into large bowl, cover loosely. (I use plastic wrap) Do NOT refrigerate. Day 2, 3, 4: Stir well each day. Day 5: Add 2 c of each-sugar, flour, milk. Mix well. Day 6, 7, 8 & 9: Stir well each day. Day 10: Add 2 c each-sugar, flour, milk. Mix well. Measure 6 cups starter. Give 2 cups each to 3 friends with instructions. Or give to 2 friends, and keep 1 starter for yourself. To the remainder of the starter add the following ingredients: 1 1/2 c Oil (I use vegetable oil) 6 Eggs 2 c Sugar 4 c Flour 4 ts Vanilla 1 ts Nutmeg 4 ts Cinnamon 4 ts Baking Powder 3 ts Baking Soda 1 ts Salt (I never add the salt) Now add, 1 of the following: A. 14 oz can crushed pineapple (drained) & 2 c raisins (or 1 c nuts 1 c raisins) OR B. 14 oz can applesauce & 2 cups raisins (or 1 c nuts 1 c raisins) OR C. 5 c bananas (mashed) & 2 c chocolate chips OR D. 2 c chopped cranberries & 1 c raisins or nuts OR E. 14 oz can pineapple (drained) & 2 c carrots (grated) Mix well and bake at 350F. For Muffins 15-20 min. For loaf or cake aprox 1 hr. Makes aprox 50 muffins, or 1 loaf & aprox 36 muffins. This friendship cake, is extremely versitile. You can mix and match just about any kind of fruit you want. With the applesauce, I've added strawberries, blueberries, raspberries. With the pineapple, I've added rhubarb, currants, gooseberries. One of my favorites, is either the pineapple or applesauce along with 1 c of carrot & 1 c of raisins (or one of the berries available to me) (I did say you can mix and match!) Now that my kids are grown and on their own, and most of my friends are now making their own cakes. (I've really run out of people to pass the starter on to) I have now cut the starter in half. So I only start with 1 cup of the starter, and of course with that, you ONLY ADD 1 c of EACH on "adding days". I keep 1 cup of starter to begin again, and what is left, is the exact amount (4 cups) to make the "full recipe" for the cake. |

Please Note: Make sure you put the starter in a fairly large container. As it "brews", it will bubble up, and if the container isn't big enough, you will end up with it all over the counter. (And please believe me, it is a horrible mess to try and clean up) |
