Cookie Recipes
            Oatmeal Chocolate Chip Cookies

1   C   Butter or Margarine
1   C   Brown Sugar
2        Eggs
2   C   Flour (white or whole wheat, or 1 c each)
2   C   Rolled Oats (prefer small)
1   ts   Vanilla
           Chocolate chips (as many as you want)
1   ts    Salt

Mix wet ingredients first; add dry ingredients; stir. Refrigerate for about 20 to 30 min (this is a must)  Drop my rounded teaspoonful  onto cookie sheet.  Bake in 325F-350F oven for aprox 8-10 min, or until done. 

When I make this recipe, I usually make a double batch and add about 3 cups of chocolate chips.

Yields aprox 4 doz
                Peanut Butter Cookies

1 1/2 C  Peanut butter
     1  C  Margerine
     1  C  Brown Sugar (packed)
     1  C  White Sugar
     2       Eggs
     1  ts  Vanilla
2 1/2 C  Flour
     1  ts   Baking Soda
     1  ts   Baking Powder
     1  ts   Salt

Cream peanut butter, marg, white sugar and brown sugar.  Blend in eggs and vanilla.  Sift flour, baking powder, baking soda and salt; add to cookie mixture.  Blend until mixture is smooth.
Use a rounded teaspoon of dough and form into balls.  Place on ungreased cookie sheet, slightly flatten with fork.

Bake at 350F for 12-15 min or until slightly brown.

Yields aprox 6 doz
                Short Bread Cookies

1/2  C  Corn Starch
1/2  C  Icing Sugar
   1  C  Butter    (NOT MARGARINE!)
   1  C  Flour

Sift together corn starch, icing sugar and flour.  Blend in butter until dough is formed.  Shape into 1" balls.  Place on ungreased cookie sheet.  Very lightly barely flatten with fork.  Bake at 300F 20-25 min.

Yields aprox 2 1/2 doz

This recipe was shared with me and now with you by my Mom.  My brothers, sisters and myself  grew up eating these shortbread cookies, and have never tasted anything we liked better.
                       Raisin Cookies

   2  C  Raisins
   1  C  Water
   1  ts  Baking soda

   1  C  Shortening
   2  C  Brown Sugar
   3       Eggs, well beaten
   1  ts  Vanilla
   3  C  Flour
1/2  ts  Salt
   1  ts  Cinnamon (or 2 if you like
1/4  ts  Nutmeg
   1  C  Nuts chopped (optional)
   1  ts  Baking powder

Boil briskly for 5 min 2 c raisins in 1 c water.  then stir in 1 ts baking soda.  Cool

Cream shortening, brown sugar, eggs and vanilla.  Add remaining ingredients.  Stir in raisins.  Drop from teaspoon.  Allow space to spread.  Bake at 375F. 

Yield aprox 7 dox.
