Porcupine Meat Balls

1 lb. ground beef
1/2 cup rice (uncooked)
1/2 tsp. salt
1 small onion (chopped)
1/2 cup cold water
1 cup hot water
1 cup tomato sauce
1 tsp. worcestershire sauce
2 tsps. steak sauce

Combine the beef, rice, salt, onion, cold water, worcestershire and steak sauces thoroughly. divide micture into uniform balls and place in a covered baking dish. Mix the hot water and tomato sauce and pour over the meat balls. Cover and bake at 325 for 1 1/2 hours.

Creamy Fried Tomatoes

6 large, ripe tomatoes
1 Tbsp. flour
3/4 tsp. salt
1/8 tsp. pepper
1/4 cup butter
2 Tbsps. flour
1 1/2 cup milk
3/4 tsp. salt
1 1/2 tsp. sugar
3/4 tsp. thick steak sauce
1 1/2 tsp. prepared mustard

Cut off top and bottom of the tomatoes then half tomatoes crosswise. Combine 1 Tbsp. flour, 3/4 tsp. salt, and pepper; sprinkle over tomato halves. Melt the butter in a skillet, saute tomatoes until barely tender. Place 10 halves on a heated platter. Mash the two halves left in the skillet and remove the skins. Stir in the 2 Tbsps. of flour, then the milk and the rest of the ingredients. Cook slowly until creamy and pour over the tomatoes.

Country Corn Bread

1 1/2 cups self-rising corn meal
3 Tbsps. (rounded) self-rising flour
1 egg
1/2 stick butter (melted)
2 1/4 cups buttermilk

Heat an Iron Skillet and melt butter in it. Mix above ingredients adding the melted butter last. Pour into the hot skillet. Bake at 425 for 25 mins. or until outside edges are brown with a golden center.
Double Bean Pork

3 cups pork (cubed and cooked)
1/4 cup vegetable oil
1 cup celery (sliced thin)
1 cup onion (chopped)
1 can sliced mushrooms (8oz)
3 med. potatoes (peeled, quartered and cooked)
1/2 cup red bell pepper (chopped)
3/4 cup green bell pepper (chopped)
1 clove of garlic (minced)
1 can pork & beans (16oz)
1 can kidney beans (16oz)
1 can tomato paste (6oz)
2 tsps. salt
1 tsp. black pepper

Trim excess fat from pork. Heat the oil in a heavy skillet. Add the celery, onion, peppers and the garlic. Saute until tender then stir in the meat and cook until meat is hot in the center. Add the rest of the ingredients, blending well. Cover and simmer over low heat 45 mins. to an hour.

Country Pecan Pie

Unbaked 9 inch pie shell See Pie Crusts, Toppings, and Glazes
1/2 cup butter
1/2 cup sugar
3/4 cup white corn syrup
3 Tbsps. honey
3 eggs (slightly beaten)
1 1/2 tsps. vanilla
2 cups pecan meats

Cream the butter well then slowly add the sugar, creaming until light. Slowly stir in the syrup, honey, eggs, vanilla, and half of the nuts. Pour into the shell then top with the rest of the nuts. Bake at 350 for 1 hour.

Mississippi Mud

1 stick butter
1/2 cup cocoa
5 eggs (Xtra large)
1 1/4 cups sifted flour (self-rising)
2 cups sugar
1 cup chopped nuts
2 tsp. vanilla

Melt butter, add cocoa, eggs, sugar, and flour; mix well. Stir in nuts and vanilla then pour into a greased 13 X 9 pan. Bake at 350 for 30 mins. Top immediately after removing from oven. (see below)

Topping


1 bag miniature marshmallows
1 box powdered sugar
1 stick (softened) butter
1/3 cup cocoa
1/2 cup evaporated milk

Cover the top of the cake with marshmallows as soon as it comes out of the oven. Beat the rest of the ingredients well and pour over the marshmallows before they melt together.

EXTRAS
Southern Chocolate Gravy

2 heaping tablespoons of cocoa
1 cup of sugar
3 tablespoons of flour
4 cups of milk
1 teaspoon of vanilla
1 tablespoon of butter

Mix the cocoa, flour, and the sugar in a pot with a fork or whisk until well blended.  Add all of the other ingredients and bring to a boil, stirring .constantly, over medium heat.  Continue cooking until the gravy is the desired thickness.  Serve hot over cat head biscuits with lots of butter.
