Pumpkin Doughnuts

Ingredients
4 C. sifted flour 1 1/4 C. sugar
4 tsp. baking powder 2 large eggs
1 tsp. salt 3/4 C. cooked pumpkin
1/2 tsp. baking soda 1 C. buttermilk
2 tsp. pumpkin pie spice 1 1/2 tsp. vanilla
3 Tbsp. shortening Oil for deep fat frying

Sift together dry ingredients (including spice). Cream together shortening & vanilla. Add sugar gradually, beating well after each addition. Add eggs; beat well after each one. Blend in pumpkin. Heat oil to 365 degrees. To the creamed mixture add sifted dry ingredients alternately with buttermilk, beginning & ending with dry ingredients. Drop from teaspoon into heated oil and fry only as many at one timeas will float uncrowded in the fat. Turn with tongs as doughnuts rise to the surface & fry 3 to 4 minutes or until lightly browned. Drain on absorbent paper.
