Crockpot Lentil Vegetable Soup

2 cups lentils 5 cups water
2 slices bacon, diced 1 onion, chopped
1 carrot, thinly sliced 2 stalks celery with tops, sliced
1 clove garlic, minced 1/2 tsp. salt
1/4 tsp. pepper 1 (15 oz.) can tomatoes
2 Tbsp. vinegar

Fry bacon and drain on paper towel and add to crockpot. Place all other ingredients, except vinegar, in crockpot. Cover and cook on low for 8 hours. Add vinegar before serving. Serves 6 people. Enjoy!!
