4 lbs. ground lean beef or turkey | 2 or 3 Tbsp. vegetable oil |
2 (15 oz.) cans tomato sauce | 2 (28 oz.) cans whole tomatoes in juice, cut up |
2 cups water | 2 (28 oz.) cans pinto beans |
1/4 cup chili seasoning mix (see below) |
4 tsp. cumin seeds | 2 tsp. dried oregano |
2 tsp. salt | 1/4 cup ground red chili pepper or cayenne |
2 Tbsp. dried onion, minced | 1 tsp. crushed dried red pepper |
1 tsp. garlic powder | 1/4 cup paprika |
Combine all ingredients for seasoning mix and set aside. In a large kettle, brown meat in oil, stirring occasionally. Add tomatoes, tomato sauce, water and seasoning mix. Bring to a boil, cover and simmer for 45 minutes. Rinse beans, drain and add to chili mixture. Cover and simmer for 15-20 minutes.
