Chili

Ingredients
4 lbs. ground lean beef or turkey 2 or 3 Tbsp. vegetable oil
2 (15 oz.) cans tomato sauce 2 (28 oz.) cans whole tomatoes in juice, cut up
2 cups water 2 (28 oz.) cans pinto beans
1/4 cup chili seasoning mix (see below)

CHILI SEASONING MIX
4 tsp. cumin seeds 2 tsp. dried oregano
2 tsp. salt 1/4 cup ground red chili pepper or cayenne
2 Tbsp. dried onion, minced 1 tsp. crushed dried red pepper
1 tsp. garlic powder 1/4 cup paprika

Combine all ingredients for seasoning mix and set aside. In a large kettle, brown meat in oil, stirring occasionally. Add tomatoes, tomato sauce, water and seasoning mix. Bring to a boil, cover and simmer for 45 minutes. Rinse beans, drain and add to chili mixture. Cover and simmer for 15-20 minutes.
