| 1 egg, beaten | 1 Tsp. cinnamon |
| 1/2 C. cooked pumpkin | 1/4 Tsp. salt |
| 1/3 C. milk | 2 Tbsp. sugar |
| 1/4 C. melted butter | 1 Tsp. baking powder |
| 1 C. all purpose flour |
Beat together first 4 ingredients. Stir briefly into sifted dry ingredients. Batter will be lumpy. Fill will-greased muffin tins 2/3 full. Bake at 400 degrees for about 25 minutes. Makes about 16 muffins.
