2 slightly beaten eggs | 1 1/2 C. pumpkin |
1 C. sugar | 1 tsp. cinnamon |
1/4 tsp. cloves | 1/4 tsp. ginger |
1/4 tsp. nutmeg | 1 2/3 C. UNDILUTED evaporated milk |
9" single crust unbaked pie shell |
Combine eggs, pumpkin, sugar, salt, & spices. Gradually add evaporated milk. Mix well & pour into unbaked pie shell. Bake in hot oven (425 degrees) for 15 minutes; Reduce to moderate heat (350 degrees) & continue baking for about 40 minutes, or until knife inserted near center of pie comes out clean.
