3 10-ounce pkgs. frozen chopped spinach |
1/2 cup finely chopped onion |
2 Tbsp. butter/margarine | 4 beaten eggs |
2 cups milk | 3 cups soft bread crumbs |
3 cups chopped fully cooked ham |
1/2 tsp. seasoned salt |
2 1 1/8-ounce envelopes hollandaise sauce mix |
4 hard-cooked eggs, chopped |
Cook frozen spinach according to package directions; drain well. Cook chopped onion in butter till onion is tender But Not brown. Combine beaten eggs and milk. Add bread crumbs, ham, cooked onion, spinach, & seasoned salt; mix well. Spread evenly in a 12 x 7 1/2 x 2-inch baking dish. Bake, uncovered, at 350 degrees till set, 40 to 45 minutes.
Meanwhile, prepare hollandaise sauce mix according to package directions; stir in chopped hard-cooked eggs.
To serve, cut casserole in squares; spoon sauce over each serving. Serves 12 people.
