1 small butternut squash | 6 Tbsp. brown sugar |
3/4 tsp. pumpkin pie spice | salt & pepper to taste |
Pierce squash in several places, microwave on high for 10 minutes; Turn over and around, continue for 10 minutes more. Let stand for another 10 minutes. Cut, remove seeds & peel. Cut into cubes, place in 2 quart microwave dish. Sprinkle with brown sugar & pumpkin spice, dot with butter. Cover with lid or waxed paper and microwave for 5 minutes, stirring once. Season with salt and pepper.
