| 1 Tbsp. onion | 1 1/2 Tbsp. butter |
| 2 C. spinach, cooked drained & Chopped |
1 egg yolk |
| 1 C. cooked rice | 1/2 C. grated cheese |
| 8 - 12 squash blossoms |
Saute onion in butter. Add spinach and rice. Mix well. Stir in egg yolk, cheese, add salt and pepper to taste. Stuff blossoms and place in buttered baking dish. Bake in moderate oven until heated through.
**Squash blossoms also lend themselves very well to a meat stuffing, to be served as a main dish.
