Spaghetti Squash Bake

Ingredients
2 Tbsp. butter 1 tsp. salt
2 Tbsp. flour 1 1/4 C. milk
1/2 C. cottage cheese 1/2 tsp. nutmeg
2 hard boiled eggs,
sliced
1 C. spinach, cooked drained
& Chopped
1 1/2 C. cooked spaghetti squash Parmesan cheese

Make a white sauce by melting butter in saucepan then add flour and salt. Add milk gradually and stir until thickened. Combine 1 cup of the sauce with spinach and nutmeg. Pour the remaining white sauce into 1 quart casserole. Layer the spinach mixture, spaghetti squash, cottage cheese & egg slices. Sprinkle with Parmesan cheese. Bake at 350 degrees for 30 minutes.
