2 Tbsp. butter | 1 tsp. salt |
2 Tbsp. flour | 1 1/4 C. milk |
1/2 C. cottage cheese | 1/2 tsp. nutmeg |
2 hard boiled eggs, sliced |
1 C. spinach, cooked drained & Chopped |
1 1/2 C. cooked spaghetti squash | Parmesan cheese |
Make a white sauce by melting butter in saucepan then add flour and salt. Add milk gradually and stir until thickened. Combine 1 cup of the sauce with spinach and nutmeg. Pour the remaining white sauce into 1 quart casserole. Layer the spinach mixture, spaghetti squash, cottage cheese & egg slices. Sprinkle with Parmesan cheese. Bake at 350 degrees for 30 minutes.
