Crackers

Ingredients

3 ounces grated parmesan

1 1/2 cup pastry flour

1/4 teaspoon salt

1/4 teaspoon cream of tartar

1/4 baking soda

1/2 teaspoon cayenne pepper

3 ounces water

3 Tablespoons sesame seeds

Combine all the ingredients except the sesame seeds in a bowl and mix until the dough becomes smooth.

Roll the dough into a ball, cover tightly, and refrigerate for at least an hour, or overnight if possible.

Unwrap the dough and prepare by rolling the dough thinly and slice into squares. (If you have a cookie gun, you can also press the dough through a narrow slit disc, slicing the strip into small cracker size pieces.)

Brush the surface with water and sprinkle with sesame seeds. Bake at 400 degrees F until crackers are golden brown.

Parchment paper is handy to line the baking tray if you have it.
