Italian food has created quite an impact on the local Singaporeans. Recently,
restaurants have discovered an innovative way of combining pasta with the
Chinese shark's fin and yu sheng compliments of an Italian man.
Seven centuries after Marco Polo purportedly brought noodles from China to
Italy, another Italian man has hit upon yet another great idea to adapt from
Chinese Food.
Unlike the Chinese yu sheng, where diners crowd round a table to toss the raw
fish dish, the Italian version of pasta with shark's fin and yu sheng is
served as a la carte. This unique dish does not taste like the traditional
yu sheng because of the passion-fruit dressing. Instead of regarding it as a
Western salad, one should think of it as a Western salad with an authentic
Asian twist. Yu sheng is so perfect for crossing the cultural boundary that
one really wonders why it took so long.
A food which shows the resemblence between Italian cooking and Chinese
cooking is the Western grilled pork. The old Chinese recipe for the
preparation of pork is the suckling pig. The suckling pig has a light
and crispy skin with fragrant flavours. When cooking suckling pig, Chinese
use the method of roasting the pork over a fire, which is similar to the Western way of grilling where the pork
comes in direct contact with the burning fire. However, if the
Westerners were to use the grilling method to prepare the pork, a chewy skin,
tough meat Western grilled pork will be obtained instead.
We can see that each race has its own distinct food character. Without these
variable characteristics, we will not be as privileged as we are at present
to be able to taste a wide variety of food. To drag the topic away, I
shall introduce the characteristics of Italian food.
Their preparation is based on sound principles of using fresh ingredients of
the highest quality and turning them into a finished dish with the least
amount of modification, thus preserving their inherent goodness and flavour.
Italian food such as pizza and spaghetti are well liked probably for their
cheesy taste. This probably explains why we even have the new 'stuffed crust
pizza' with extra creamy cheese, to satisfy our appetites. Mmmm...
