Margherita Pizza
Here is the recipe of a pizza commonly found in Singapore, It is a favourite amongst many people due to its cheesy flavour. The red and yellow tomatoes sprinkled all over taste really superb too!!
Ingredients:
1 recipe pizza dough divided into 4 pieces
1 cup grated fresh mozzarela or Italian Fontina cheese (4 ounces)
2 tablespoons extra-virgin olive-oil
¼ cup freshly grated Pecorino Romano cheese
2 cups peeled, seeded & chopped plum tomatoes or 1 garlic clove minced one 28-ounce can whole tomatoes, drained, seeded
½ teaspoon salt & chopped
1 cup lightly packed fresh basil leaves
Procedure:
- Preheat the grill to high and brush with oil.
- Lightly flour 2 baking sheets.
- On a mildly floured surface, roll one piece of dough into a circle about 1/8 inch thick.
- Place on a prepared baking sheet.
- Roll out the remaining dough and place on the baking sheets.
- Place one piece of the dough on the grill.
- Grill for about 1 minute, or until the underside of the dough is nicely browned.
- Using tongs, turn the dough over and grill for about 30 seconds, until the bottom just stiffens.
- Transfer to a baking sheet and repeat with the remaining dough rounds.
- Brush the pizzas with the oil.
- Spread the tomatoes evenly over the crusts and sprinkle with the mozarella, Romano, garlic, and salt.
- Top with the basil.
- Grill the pizzas, covered, 1 or 2 at a time, for 2 to 3 minutes, or until the cheese melts, making sure the undersides of the pizzas do not burn.
