In extremely large establishments, or those that are not set up effeciently to allow wait staff or expeditor to continually check if their order is up, a buzzer would be a great investment.  Having a meal dry out under a heat lamp does not appeal to a returning customer's palette.
For management that is continually on the go or on call, a pager is a great way to communicate, as well as cell phones (with voice mail).
