Country Cookin'

Welcome to my kitchen! Get ready to taste some Texas treats!

I'll share a few of my favorites and from time to time, will even surprise you with a dish from some of my friends who are scattered all over the world. While you may sample some southern cooking today, a German dish may tempt you next time.

Laura's Peachy Pork Chops

(The Kelleher Family Homepage is located at http://www.oocities.org/BourbonStreet/3277/. Renee Kelleher was kind enough to send this recipe all the way from Louisiana. It is a tasty dish from her 11-year-old daughter, Laura. Thanks for sharing!)

Preheat your oven to 425 degrees. Drain the peaches but save the syrup. Use about 1/4 cup of the syrup to moisten the pork chops, then coat them with the bread crumbs. Coat a baking dish with Pam. Put the chops in it in a single layer. Bake for 40 minutes. Put one peach half on top of each chop. Make a mixture of the brown sugar, catsup, vinegar and the remaining syrup. Pour this over the chops and peaches. Bake 10 more minute and enjoy!

(This is a recipe from a dear friend - Carol - who lives in Ft. Worth, Texas. I had the pleasure of meeting Carol, her husband Bassjerk, her daughter Hope, and some other IRC friends and we really had a great time! This is a dish she served and it is delicious! Thanks for sharing your friendship AND your recipe Carol!!)

Drain the juice from the large can of pineapple and place in a sauce pan with the 2 tablespoons of flour. Add sugar. Beat the eggs and add them to the mixture and cook until thick. Let cool. Add the chopped pineapple, cherries, pecans and marshmellows. Mix well and chill for at least one hour before serving.

If you have a favorite recipe you would like to share, please send it to me and be sure to include your name (so I can give ya credit) and let me know where you live!
