2 2/3 cups of sugar,
2 tabs. margarine or butter,
1/4 tsp.salt,
1 1/2 cups corn syrup,
7 large eggs, well beaten,
1 1/2 tsp. vanilla,
3 cups pecans,
2 unbaked pie shells
Mix sugar, margarine and salt until smooth.
Add corn syrup slowly until well mixed.
Add eggs one at a time until well incorporated.
Stir in vanilla.
Place pecans in the bottoms of the unbaked pie shells.
Add filling . Bake at 325 degrees until the filling has set medium-firm.
cool and serve.
makes two pies
Watermelon Cake
1 two layer package white cake mix,
1 1/3 cubed seedless watermelon,
1 pkg. mixed fruit gelatin powder,
3 egg whites,
1 tablespoon oil,
Grease and flour a bundt pan.
In large bowl, combine dry cake mix,cubed watermelon,
gelatin powder, egg whites and oil.
Beat until smooth. Pour into a prepared
pan and bake at 350 dergrees for about 35
minutes or until cake tester inserted
in cake comes out clean. cool on a rack and frost with watermelon icing
Icing
1/4 cup watermelon juice,
1/2 cup butter,
2 cups powdered sugar
2(3oz)pkg. cream cheese, softened
Beat cream cheese and butter until fluffy.
Add sugar and watermelon juice;
stir until blended.
(note the watermelon provides the liquid in this recipe)
