Christmas Treats

Lace Cookies

Sometimes these cookies were rolled around a buttered wooden spoon handle to make them "rolled up" in appearance. It has to be done while the cookies are still warm. They taste just as good flat.

Ingredients

1/2 Cup butter

1 1/2 Cup oatmeal

1 egg

2/3 Cup sugar

1 teaspoon baking powder

1 Tablespoon flour

Melt the butter in a small saucepan and pour over the oatmeal placed in a bowl. Beat the egg unti light and beat in the sugar. Mix together the baking powder and flour and stir into the egg mixture along with the oatmeal mixture. Drop level tablespoonfuls of batter onto a greased and floured baking sheet 2 to 3 inches apart.

Bake in a 350 degree oven for 10 minutes or until golden brown. Do NOT OVER BAKE.

Date Swirls

Cookie recipes were gathered from friends and relatives. This one came from a favorite friend and teacher, Mrs. Watson.

Ingredients

1/2 Cup butter

1/2 Cup firmly packed brown sugar

1/2 Cup white sugar

Cream until light and fluffy.

Add 1 egg, beat well

Sift together 2 Cups flour

pinch salt, and 1/2 teaspoon soda

Add to creamed mixture.

Blend well. Toss on a lightly floured board and knead until smooth. Roll out 1/4 inch thick. Spread with date filling and roll like a jelly roll. Wrap in wax paper and chill. Slice 1/4 inch thick. Bake 400 degree for 10 minutes on greased cookie sheet.

Date Filling

1 Cup dates, cut in fourths

1/3 cup water

1/4 Cup sugar

1/4 Cup chopped nuts

Cook dates, water, and sugar until thick, stirring constantly. Add nuts and cool.

Spritz Cookie

My mother's favorite

Ingredients

1 1/2 cup butter

1 Cup sugar

1 well beaten egg

4 Cups sifted flour

1 teaspoon baking powder

1 teaspoon vanilla

Cream the butter, sugar and egg. Add flour,with baking powder to creamed mixture gradually to a smooth dough. Perfect for a cookie press.

Bake at 400 degrees until just light brown. Decorate with icing if desired.

Cats' Tongues

These cookies were spread with a dinner knife dipped in the batter and drawn on the cookie sheet in an exclamation point shape.

Ingredients

1/4 cup butter, softened

1/3 cup sugar

2 egg whites

1/8 teaspoon vanilla

1/3 cup all purpose flour

pinch of salt

Beat butter at medium speed with electric mixer until fluffy, gradually add sugar, beating well. Add egg whites and vanilla, beating just until blended.

Combine flour and salt, gradually add to butter mixture, beating just until blended after each addition. Drop batter by level teaspoonfuls onto lightly greased baking sheet. Pull a knife through batter until each cookie is about 5 inches long. One end will be wider.

Bake at 425 degrees for 4 to 5 minutes until edges are lightly brown. Immediately remove from baking sheets to wire racks for cooling. Yields 2 1/2 dozen cookies.

Chocolate Cookie

My favorite. Christmas wouldn't be Christmas without the chocolate-sour cream cookie. This is a soft cookie.

Ingredients

1/2 Cup butter, softened

1/2 Cup granulated sugar

1/2 Cup firmly packed brown sugar

1 egg

3 squares(3 oz) unsweetened chocolate, melted and cooled

2 Cups sifted all purpose flour

1/2 teaspoon salt

1/2 teaspoon soda

1/2 Cup sour cream

1/2 Cup milk

1 Cup rolled oats, uncooked(quick or old fashioned)

Beat butter and sugar together until creamy. Blend in egg and melted chocolate. Sift together flour, salt and soda.

Add to creamed mixture alternately with sour cream and milk. Stir in oats. Drop by teaspoonsful onto lightly greased cookie sheets. Bake at 375 degrees for 10 minutes. Cool.

Frosting

2 Tablespoons butter, softened

3 Cups sifted confectioners' sugar

1 teaspoon vanilla

3 tablespoons milk

Pecan Halves

Combine all ingredients, beat until smooth and of spreading consistency. Frost cooled cookies and decorate with nut half.

Hard Chocolate Frosting

This frosting forms a hard fudge like topping. It was one of my favorites on cake.

2 Cups sugar

2 Tablespoon cocoa

Add milk to moisten. Cook to a soft ball stage, add 1 tsp vanilla and 1 Tablespoon softened butter. Beat and frost.
