SECOND BREAKFAST BRAN MUFFINS by Jeria
Ingredients:
1 cup all purpose flour
1/2 cup whole wheat flour
11/4 cup bran flakes
1 tbsp baking powder
11/2 tsp cinnamon
1/2 tsp salt
1 egg, lightly beaten
1 cup grated carrot
1/2 cup alfalfa honey
1/2 cup water
1/3 cup safflower oil
1 Preheat oven to 400. Spray 12-cup muffin pan with cooking spray, or line with muffin papers.
2 In a large bowl, stir together all purpose flour, whole wheat flour, bran flakes, baking powder, cinnamon and salt.
3 In another bowl, stir together egg, carrot, honey, water and oil; stir into dry ingredients just until moistened. Do not overmix.
4 Divide among muffin cups. Bake in center of oven for 16 to 18 minutes or until tops are firm to the touch.
