HOBBITS:SOUPS

!This was the very firstest contribution to the HCG cookbook! Thank you, Eilona...:)

HOBBITS FAVOURITE SOUP (LEEK AND POTATO) by Eilona

Ingredients:

1 Tbs olive oil
2 lbs leeks washed and sliced
1 1/2 quarts chicken stock
Salt and Pepper
2 tsp dried each thyme and rosemary(1 tbsp fresh)
1/2 tsp anise seeds
3 bay leaves
2 lbs russet potatoes

In a large pot, saute` the leeks and clery with the oil until softened. Don't allow to brown.
Add chicken stock, a little salt and pepper and herbs.
Peel and slice potatoes adn add to soup. Bring to gentle boil, then simmer until potatoes are well cooked. Remove from heat, puree in a food processor. Pass through a fine strainer.
Reboil in a clean pot and correct seasonings.
Serve in warm bowls garnish with finely chopped thyme.

SAM'S EVOLUTION SOUP by Eilona

Take anything in your fridge that is still edible, and make it ready to meet its other maker...

Celery tops, lettuce leaves, Water to cover whatever bones you have leftover from steak, roast beef-(it doesn't matter if they've been gnawed upon, the heat will kill whatever germs are there.)
Add 1 onion diced,leftover carrots or if you haven't any leftover,one or two sliced, potatoes /noodles/rice, tomatoes, bay leaf, peppercorn, salt.
It is not advisable to put brassica veggies in as they are too strong(cabbage, cauliflower, broccoli, beets).
Let it simmer for 3-4 hours. Remove bones and let cool to remove fat on the surface.

Now add the real stuff.
