Chicken Pizza Roll Ups
2 ½ pounds chicken
½ c brown sugar
½ c sugar
½ c soy sauce
3 T Hoisin sauce
Place chicken in pan. Mix sugars, soy sauce
and Hoisin. Pour over chicken. Cook at 350 degrees for 1 hour. Turn after
30 minutes.
Sauce tastes good over white rice.
¼ c milk
¼ c dry bread crumbs
4 boneless skinless chicken breasts halves
(about 1 pound)
3 T butter or margarine
½ c chicken broth
1 c whipping cream
1 jar (4 oz) sliced pimientos, drained
½ c grated Parmesan cheese
¼ c minced fresh basil
1/8 t pepper
Place milk and bread crumbs in separate shallow bowls. Dip chicken in milk, then coat with crumbs. In a skillet over medium-high heat, cook chicken in butter on both sides until juices run clear, about 10 minutes. Remove and keep warm. Add broth to the skillet. Bring to a boil over medium heat; stir to loosen browned bits from pan. Stir in cream and pimientos; boil and stir for 1 minute. Reduce heat. Add Parmesan cheese, basil and pepper; cook and stir until heated through. Pour over the chicken.
½ c barbecue sauce
½ c orange juice
¼ c packed brown sugar
2 T vegetable oil
2 T all - purpose flour
¼ t salt, optional
4 c cubed cooked chicken
2 can (5 ½ oz each) pineapple chunk,
drained
1 can (8oz) sliced water chestnuts, drained
1 ½ t ground ginger
Hot cooked rice
In a large saucepan, combine the first six ingredients until smooth. Bring to a boil; reduce heat and simmer for 2 minutes, stirring occasionally. Add the chicken, pineapple, water chestnuts and ginger; cover and simmer for 10 minutes. Serve over rice.
1 package (6.6 ounces) instant mashed potatoes,
or 4 ½ cups hot mashed potatoes.
1 lb. ground beef
1 medium onion, chopped
1 can (14 ½ ounces) diced tomatoes,
undrained
1 can (11 ounces) Mexicorn, drained
1 can (2 ¼ ounces) sliced ripe
olives, drained
1 envelope taco seasoning
1 ½ t chili powder
½ t salt
1/8 t garlic powder
1 cup (4 ounces) shredded cheddar cheese,
divided
Prepare mashed potatoes according to package directions. Meanwhile, in a large skillet, cook beef and onion until the meat is browned; drain. Add tomatoes, corn, olives, taco seasoning, chili powder, salt and garlic powder. Bring to a boil; cook and stir for 1-2 minutes. Transfer to a greased 2 ½ qt. baking dish. Top with ¾ cup cheese. Spread mashed potatoes over the top; sprinkle with remaining cheese. Bake, uncovered, at 350 degrees for 12-15 minutes or until cheese is melted.
4 quarts plain popcorn
1 t cinnamon
1/3 c butter
¼ t salt
¼ c sugar
Prepare popcorn and place in a buttered 9x13 pan. In a sauce pan, melt butter over low heat. Stir in sugar, cinnamon and salt. Mix well until sugar dissolves. Pour over popcorn, tossing to coat evenly. Bake in 300 degree oven for 10 minutes. Cool slightly before serving.
½ c chopped onions
¼ c shortening or butter
¼ c flour
1 t salt
2 c milk
1 c grated cheese
1 T prepared mustard
½ lb ham or hot dogs
3 c sliced potatoes
Cook onion in shortening until tender. Stir in flour and salt. Add milk, cook and stir over low heat until thickened and bubbly. Stir in cheese and mustard. Cut meat into 1/3 inch slices. In 2 qt, casserole, arrange layers of half the meat and cheese sauce. Repeat layers. Bake at 325 degrees for 1 1/4 hours.
1 lb hamburger
½ cup chopped onions
2 c cheese
corn or flour tortillas
1 can enchilada sauce
1 can (15 ounce) tomato sauce
Fry hamburger and onion. Immerse tortilla in hot fat. Blot with paper towel (Not necessary with flour tortillas) Fill with hamburger and cheese. Roll and fasten with toothpicks. Cover with tomato sauce and enchilada sauce mixture. Bake in a 9x13 pan for 10-15 minutes and 350 degrees.
1 lb hamburger
1 can kidney beans
1 can mexibeans, red beans, or chili beans
1 (15 ounce) can tomato sauce
1 t chili powder
1 T dried minced onion or ¼ c fresh
Brown hamburger. Drain grease. Add all ingredients
into a large pan. Add water till it is at the thickness you like. Bring
to boil. Simmer for 30 minutes.
You can also put it all in a slow cooker
for a few hours.
Basic Meatballs:
1 lb hamburger
1 egg
¼ c onion, chopped
1/3 c dry bread crumbs
¼ c milk
¾ t salt
1/8 t pepper
1 t worcestershire sauce
Mix and shape into 1 1/2 inch balls. Put in 9x13 pan. Bake uncovered in 400 degree oven for 20 minutes.
Sauce:
1 T cornstarch
½ c brown sugar
1 can (15 ounces) pineapple tidbits, or
chunk
1 T soy sauce
1/3 c vinegar
½ c chopped green pepper
Prepare basic meatballs. Mix cornstarch and sugar in a large skillet. Stir in pineapple (with syrup), soy sauce and vinegar. Cook, stirring constantly until mixture thickens and boils. Add meatballs. Cover and simmer 10 minutes, stirring occasionally. Stir in green peppers. Cover and simmer for 5 minutes.
Serve with/over rice.
4 boneless skinless chicken breast halves
12 pepperoni slices
8 mozzarella cheese slices, divided
1 can (15 oz) pizza sauce
Minced fresh parsley, optional
Flatten chicken to 1/4 in. thickness. Place three slices of pepperoni and one slice of cheese on each. Roll up tightly; secure with toothpicks. Place in a greased 11x7x2 baking dish. Spoon pizza sauce over roll ups. Cover and bake at 350 degrees for 35-40 minutes. Uncover; top with the remaining cheese. Bake 5 -10 minutes longer or until cheese is melted. Sprinkle with parsley if desired.
