INGREDIENTS
300Gr Red,
Green, White Fresh Tagliatelle Some
Butter 100 Gr
Smoked Salmon Sliced 4 little
red tomatoes peeled and chopped 2 Spoons
of caviar (or substitute) Some
fresh little leafs of dill DRESSING
200 Gr of
thick rich milk cream 1 Egg
yolk 1 T spoon
of minced dill 50 Gr of
Gorgonzola Cheese (Blue Cheese) Salt and Black Pepper |

1°STEP
Boil your tagliatelle separately in salted
boiling water for three, four minutes (more if using dried tagliatelle or
different shapes). Strain
your pasta slightly underdone (al dente!) Wash your
pasta under hot running water and strain well again. |

2°STEP
Prepare
your dressing : Put in a
little pan your milk cream , the egg
yolk , the minced dill, gorgonzola cheese, salt and pepper. Let it cook
slowly and gently for 5 minutes always mixing until thickened |

3°STEP
Distribute
your tagliatelle in four little buttered moulds, alternating layers: red
tagliatelle, than green, white and red again. Press
your filled moulds using a T spoon. Turn your
tagliatelle out of moulds by positioning a plate on the top of each mould and
turn upside down. |

4°STEP
Decorate
your plate alternating your chopped tomatoes and sliced smoked salmon all
around your tagliattelle. Add the
caviar on the top of the salmon. Add the
dill leafs to the salmon and tomato. Dress
your tagliatelle with the hot sauce. |
