This is a very healthy salad, specially for veggies. It is served as salad or mezzeh with barbecues.
~Ingredients~
Clean beans. Soak overnight (minimum 10 hours). Throw soaking water and wash in
a sieve under running water. Put in pan and cover with water. Boil until done and drain well.
Cut onion into tiny slices. Mix with beans. Prepare dressing by mixing salt, pepper,
garlic, oil, vinegar and lemon juice. Pour over beans and mix. Put in serving
bowl and decorate with raddish slices topped with seeded olives. Serve cold or at room temperature.
Variation: You can add ½ cup steamed rice or pasta and green pepper strips to have a delicous main course for veggies.
