~Salatet 3Esh Ghorab~
(Mushrooms Salad)
This is not really a traditional Egyptian dish as mushrooms were not cultivated in
Egypt until recently. However, it has gained popularity very fast for its richness
in vitamins, low calories and taste. Vegetarians can omit fresh cream and have a tasty dish.
~Ingredients~
500 g fresh or canned mushrooms
1 tbsp chopped parsley
1 tsp salt
½ tsp black pepper
6 cloves garlic chopped
2 tbsp corn oil
1 tbsp single or fresh cream
Juice of 2 lemons
If using fresh mushrooms, wash under running water then pat dry. If using canned
mushrooms, wash thoroughly in a thieve and allow to drain. Slice mushrooms.
In a saucepan, heat oil. Add salt, pepper, and cloves and stir until golden brown.
Add mushrooms and stir until done. Remove from heat. Add lemon juice and cream.
Mix well.
Put in serving plate and sprinkle with chopped parsley. Serve hot, cold or at room temperature.
Serves 4-6.
