(Chickpeas Mezzeh)
This salad is very versatile. You can serve it with anything, specially barbecues. Try it in place of
relish with hot dogs; it is delicious. You can add one teaspoon of Hommos to any dressing and notice
the difference. It is usually served as a dip with crackers. Excellent for veggies.
~Ingredients~
500 g dry chickpeas (1 500g-can)
½ tsp baking soda
5 cloves garlic
¾ cup lemon juice
1 tsp salt
1 cup Tehina
½ tsp cumin
5 tbsp olive oil
If using dry chickpeas, soak them overnight (at least 10 hours) in cold water with ¼ tsp
baking soda. Take out any red beans. Change water and add remaining baking soda.
Boil until cooked. They should be easily crushed with a fork.
Set a few peas aside for decoration. Put cooked or canned peas in mixer and beat well. Add crushed cloves and beat again.
Put in a bowl and add Tehina. Mix well. If mixture is too thick add some water. Mixture should
be rich and creamy. Gradually add lemon juice while mixing well. Sieve mixture to get rid
of any lumps.
Put mixture in serving plate. With back of a spoon, smooth mixture
all over the plate so borders are thicker than middle. Decorate with whole peas and olive oil; sprinkle
with cumin. Serve cold or at room temperature.
Yields 2 cups.
