Mint Dill   ~ Salsa Bonny ~   Bayleaves Rosemary

(Gravy)

This sauce is mainly used with meat & poultry.

~ Ingredients ~
1 tbs ghee or 2 tbs corn oil
1 tbs flour
1 tbsp white vinegar
2 cups stock 0r 2 cups warm water & 1 stock cube
1 small carrot sliced
1 small shallot finely chopped
3 cloves garlic chopped (optional)
salt & white pepper to taste

Melt ghee until very hot or heat corn oil. Add chopped shallot, garlic, if using, and sliced carrot. Stir until golden. Remove from shortening and add flour. Keep stirring on very low heat until brownish. Remove from heat and gradually add stock while beating well.
Return to medium heat and keep stirring until boiling. Keep boiling for 3 minutes, then return vegetables and season.
Lower heat and leave simmering for 30 minutes. Sieve gravy and add vinegar.
Serve in a sauce bowl with roasted meat or poultry.
Enough for one recipe.
