This sauce is mainly used with meat.
~ Ingredients ~
Melt ghee until very hot or heat corn oil. Add chopped garlic and stir until golden. Add sieved tomatoes and leave simmering on
low heat until tomatoes are cooked. You will know when shortening floats on the surface. Add vinegar and season, then mix well.
Add stock or diluted stock cube, stir and leave, half covered, on low heat for another 15-20 minutes.
500 g ripe tomatoes
½ head garlic finely chopped
1 tbsp white vinegar
2 cups stock 0r 2 cups warm water & 1 stock cube
2 tbsp Ghee or 4 tbsp corn oil
salt & pepper to taste
Use as directed.
