(Chicken Soup)


~ Ingredients ~
1 small chicken
8 cups cold water
1 onion cross-cut
2 cardamon seeds
2 cloves mastic
2 sprigs celery
salt, pepper & lemon juice to taste

Wash chicken thoroughly with salt and flour. Rinse, cut into serving pieces and place in saucepan. Add water, cardamon, mastic, onion and celery. Place over medium heat and leave to cook, half covered, for about 1-2 hours. Remove foam as soon as it forms.
When chicken is cooked, drain from liquid. Leave to cool then cut into small pieces. Cool liquid then remove fat layer and sieve.
Add chicken pieces to liquid, season and return to heat. Bring to boil. Remove from heat and add lemon juice.
Serves 4-6
