~ Ingredients ~
Wash chicken thoroughly with salt and flour. Rinse, cut into serving pieces and place in saucepan.
Add water, cardamon, mastic, onion and celery. Place over medium heat and leave to cook, half covered, for
about 1-2 hours. Remove foam as soon as it forms.
1 small chicken
½ cup vermicelli
8 cups cold water
1 tbsp ghee or butter
1 onion cross-cut
2 cardamon seeds
2 cloves mastic
2 sprigs celery
salt, pepper & lemon juice to taste
Cut vermicelli into small pieces. Melt fat
over medium heat then add vermicelli.
Stir until golden then remove immediately. Take care as vermicelli tend to burn very fast.
When chicken is cooked, drain from liquid. Leave to cool then cut into small pieces.
Cool liquid then remove fat layer and sieve. Add vermicelli and chicken pieces to liquid,
season and return to heat. Leave for 15 minutes over medium heat.
Remove from heat, add lemon juice and serve.
