This is a very delicious and nourishing soup though it does not look
appealing to most people. It is also full of collagen and very warming in
winter.
~ Ingredients ~
Ask your butcher to cut trotters into chunks. Wash and scrub trotters very
thoroughly; use soap if necessary to get rid of any smell. Take away all hair that might be on the
trotters. Easiest way is to hold the trotters over the stove close enough to the
fire to burn the hair without burning the skin.
The broth is often used to prepare other dishes like Warak 3Enab Bel Kaware3 (Stuffed Vine Leaves), that will
be featured under stuffed vegetables.
A pair of trotters
1 large onion
2-3 seeds cardamom
2-3 Mastic
Salt and pepper according to taste
While washing the trotters, put water in a large pan and bring to boil.
The quantity of water depends on the quantity of the trotters as they have to
be submerged. When the water starts boiling, add the trotters and the onion.
Leave to boil while scooping foam as soon as it forms. Add all other spices
and season with salt and pepper. Leave to boil until the trotters are tender
and well cooked.
