~ Ingredients ~
Wash meat. Remove any visible fat and place in saucepan.
Add water, cardamon, mastic, onion and celery. Place over medium heat and leave to cook, half covered, for
about 1-2 hours. Remove foam as soon as it forms.
1 k lean beef or veal cut in medium cubes
8 cups cold water
1 onion cross-cut
2 cardamon seeds
2 cloves mastic
2 sprigs celery
salt, pepper & lemon juice to taste
When meat is cooked, drain from liquid and set aside. Cool liquid then remove fat layer
and sieve.
Add meat cubes to liquid, season and return to heat. Bring to boil. Remove from heat and add lemon juice.
