~ Ingredients ~
Wash meat. Remove any visible fat and place in saucepan.
Add water, cardamon, mastic, onion and celery. Place over medium heat and leave to cook, half covered, for
about 1-2 hours. Remove foam as soon as it forms.
1 k lean beef or veal cut in medium cubes
½ cup bird's tongue ( type of pasta that looks like rice grains)
8 cups cold water
1 tbsp ghee or butter
1 onion cross-cut
2 cardamon seeds
2 cloves mastic
2 sprigs celery
salt, pepper & lemon juice to taste
Melt fat over medium heat then add bird's tongue. Stir until light brown then remove from heat.
When meat is cooked, drain from liquidand set aside.
Cool liquid then remove fat layer and sieve. Add bird's tongue and meat cubes to liquid,
season and return to heat. Leave for 15 minutes over medium heat.
Remove from heat, add lemon juice and serve.
