~ Ingredients ~
1 medium white firm fish (approx. 500-750 g)
1 medium onion
1 sprig celery
1 tbs chopped parsley
1 tbs corn oil
lemon, cardamon, salt, mastic, pepper
enough water to submerge fish
In a pan, heat oil then add water, cardamon, peeled cross-cut onion, and celery.
Wash fish thoroughly with salt and flour, then cut into chunks. When water starts boiling,
add fish chunks, head and tail, and lemon juice. Leave on medium heat until fish is cooked.
Season to taste.
You can either serve fish on the side or in the soup.
