~ Ingredients ~
1 medium white firm fish (approx. 500-750 g)
1 large onion coarsely chopped
¼ cup corn oil
1 cup fresh tomato juice or 2 tbsp tomato paste diluted in ½ cup water
4 cups water
salt, pepper & lemon juice to taste
In a pan, heat oil until sizzling. Add onion and stir until light brown. Remove from heat and
mash well with a fork. Return to heat and add water, salt, pepper and bring to boil
over low heat. Add tomato juice or diluted tomato paste and bring to boil again.
Meanwhile, wash fish well with salt and flour. Rinse and cut into medium chunks. Add to boiling
liquid. When fish is done, remove from heat and add lemon juice.
You can either serve fish on the side or skin it and serve in the soup.
