Wonton Soup Total Time: 20m Ingredients: *12 oz. Shanghai wonton skins *6 oz. flank pork *8 oz. cabbage *2 shallots *2 T. fresh onion chopped fresh onion Seasonings: *2 t. potato starch *1 t. each of oil and sugar *t. salt Method: 1.Wash cabbage clean, scald it in boiling water with oil and salt, scoop it out, rinse it with cold water squeeze it dry and shred it finely. Skin shallots. 2. Wash pork clean, wipe it dry. Cut the fat and lean parts apart, cut the fat pork into coarse pellets; cut the lean part finely; chop it. Mix both together.Add seasonings and cabbage shreds and mix them well into stuffing . 3.Take a Shanghai wonton skin; put adequate amount of stuffing in the centre, fold the skin up ,bind the opening with water fold it up once more and make in into the shape of a shoe. 4. Boil the wontons in boiling water until they float and scoop them out 1/2 minute later; bring fine stock and shallots to boil. Put the wontons in to boil for a while. Place them in a bowl, pour boiling stock in and sprinkle chopped fresh onion for serving. |
