Minotaurs, go to Gamers.com to see the D&D3e Minotaur in their MM report.
Among the largest bipedal creatures is the Minotaur, topping over eight feet with horns cresting out of the sides of it's skull. The Minotaurs of D&D3e are as large as Ogres and nearly as strong; in truth they are a little bit shorter and a bit more hardier.
Usually brown, black or red colors the hide of the Minotaur, while their horns range from light brown to black. These weapons have been known to tear through shields and pierce the thickest armors. Powered by muscular legs, Minotaurs use their weight behind those horns to deliver maximum damage in a charge. Overall they are stocky monsters, which like Ogres can be found in some armies serving as heavy infantry. This is not common though most choose to be solitary, preferring life alone.
In battle a Minotaur will not give up or surrender, especially near the end or if out numbered. Other races see them as savage beastmen, nothing more.
The Minotaurs of Dragonlance are not as barbaric as those previously mentioned. The AD&D Monsterous Manual hinted at more intelligent Minotaurs, these being those of Krynn. On Krynn Minotaurs are honorable, lawful fighters. They live for battle but only that which is honorable or can lead to such a death. They are master sailors and navigators, able to pilot around the Blood Sea with ease. Krynnish Minotaurs believe themselves to be more superior than the other races and are destined to rule Krynn one day. They have been enslaved many times and broken free each time, because of this they have a certain hatered for other races. All are inferior and below them.
Those just described above are the Blood Sea Minotaurs, far off to the east the Kazelati Minotaurs live. Decendants of Kaz the Minotaur the Kazelati are more cultured and a little less violent, but still Minotaurs at heart. They believe the time to rule will come one day also, but it will not be forced to it will just happen.

Dragonlance History : Minotaurs, the chosen ones
Minotaurs are among the largest and most powerful races on Krynn, believed to be mere beasts with little society, they are actually quite the opposite. Minotaurs live by a code of honor; similar to the Knights of Solamnia. This code strongly dominates every Minotaur's life, they never do anything to bring dishonor upon them or their family. Due to the stereotypes of other races and the fact that they appear to be more beast than man, minotaurs are not outwardly trusted. Especially by those far inland who rarely see minotaurs.
In 3051PC this race was created by the Graygem, which with its chaotic power warped Ogres, into Minotaurs. Even though these Ogres now Minotaurs were once the same as their fellows, the Ogres rejected them as a sort of "blasphemy". Thus the Minotaurs became enslaved by the Ogres and suffered years of attrition at their master's hands. Eventually they broke free of their enslavement only to become enslaved once again, but this time by Dwarves who already had existed for centuries before them and were far superior at the time in ways of combat.
Showing great resiliency the Minotaurs escaped slavery again, and were lead by
Ambeoutin who slew dwarf after dwarf... thereafter organizing the Minotaur race and leading them eastward south of Istar. They saw their destiny and set forth on to a better life. Upon reaching "their destiny", Ambeoutin established the foundation for the Minotaurean way of life, he founded Mithandrus (2700PC). Ambeoutin's  two sons, Mithas and Kothas, split the Minotaur Empire in two upon his death in 1560PC. Thus Mithas and Kothas (which became islands in 0 AC) became established. The island of Mithas is north of Kothas and has a range of mountains (Arkon Mtns) that are volcanic, the island also suffers from tremors now and then. Kothas on the other hand is relatively barren. The Minotaur Empire was now established and soon flourished, and became known to all of Krynn...

Some may know of a sect of minotaurs not living on the Isles but elsewhere, farther east on the
Holakan Islands. These are the Kazelati Minotaurs descendants of Kaz and Helati. Kaz's fame as a champion and renegade of sorts attracted many to a settlement south of Istar before the cataclysm. These followers and their future generations created the Kazelati clan. The settlement broke free and became islands during 0 AC. The islands themselves are magically hidden by a spell curtesy of Sutor the Blind (a minotaur mage) as so they are not discovered. The Kazelati Minotaurs are not as violent as Blood Sea Minotaurs, their arenas are for more olympic style sports not pure bloodshed; although they do use the arena for criminal purposes like Blood Sea Minotaurs. Like their westward cousins the kazelati do not have a liking for magic, but they do have a tower of magic upon their isles, which was directed by Sutor, the minotaur mage. It is important to note Sutor is not the only minotaur mage upon the Holakan Islands.

Personality
Since Minotaurs live by a code of honor, there are a very "lawful" race on the whole. Due to their lifestyle most Blood Sea Minotaurs believe that "might makes right" and thus are a somewhat violent race. Kazelati Minotaurs are more calm, collected and they do not boast as much about their destined superiority to other races. Nonetheless both clans' beliefs/opinions hinge upon the notion that they are the most superior race on Krynn and are destined by the Gods to rule the lesser races.
Law, Justice and the Arena
The Arena (The Great Circus) is the center for which the Minotaurs fight for family honor, ruler ship of the empire, challenges, etc. Also it is where accused criminals fight to clear their name and regain lost honor. An accused Minotaur may fight other Minotaurs or drakes, lions or other wild beasts, while a guilty Minotaur is made a spectacle for the crowd and fights in uneven situations where his/her death is a highly probable.
Kazelati Minotaurs have areanas also and use them similarly for solving legal matters but they do not house they bloody combat instead olympic-like sports; running, lifting, etc. Even at times games requiring mental skill.
The Arena is an oval shaped open dome structure, walled high with ample seating room for the populous. The
Arena of Nethosak's floor is sand, stained crimson from the countless battles over time. Underneath the floor is where criminals are kept along with animals. The Emperor watches over the games from a throne seated high on the wall, he is sided by guards who from a ring surrounding the floor atop of the walls. All the guards are armed with missile weapons ready to loose them when unfair combat or chaos rears it head. The reason Minotaurs fight in the Arena is to compete to be the best and therefore rule.
Culture and Gods
The Arena being the heart of Minotaur society, and carries great influence and importance in life for Blood Sea Minotaurs. Positions in government are determined by success in the Arena; The Supreme Circle made up of 8 members. Eventually if a fighter rises up the competition ladder he/she will have his/her shot for the title of Emperor; in combat with the current Emperor, the winner is deemed better suited to rule. Honor is directly related to ones performance in the Arena, "Houses" are families of Minotaurs which are related, their families' honor is gained by success in the Arena. For instance the House of Orilg, which is a highly regarded family due to their long standing greatness in the Arena, this House is located closer to the Arena and thus bigger than ones further away. This position displays a families honor outwardly to others.
Kazelati Minotaurs have a circle of twelve from which a patriarch is selected; not by combat. The position is kept until unwanted or a vast majority see fault in the patriarch.
The Gods are not thought to have much affect on the Minotaur race, because others believe they only worship Sargonnas/Sargas, this is quite true for nearly every Blood Sea Minotaur. But some Houses also worship Kiri-Jolith, the Bison Headed God. The House of Orilg is both home to Kiri-Jolith and Sargas, in that order, but some of the houses members are believers in Paladine. Kaziganthi de-Orilg found worship in Kiri-Jolith and Paladine and his beliefs are followed up by the Kazelati. Sargas, because of his recent sacrifice for his "children" is now regarded (despite being an evil god) moreso than before by the Kazelati.
