LEMON CHEESE

Ingredients     Method
       
Quantites for ~ 400g.     1. Place sugar, finely grated lemon rind, lemon juice and butter in 1.5l. bowl.
150g. Sugar     2. Microwave on high for 1½ minutes and then allow to cool.
2 Lemons     3. Whisk eggs and then add to cooled lemon mixture.
75g. Butter, softened     4. Microwave on medium power for 7-9 minutes or until thickened, beating every minute.
3 Eggs     5. Liquidise and pour into sterilised jar(s). Cover and seal.

This is what Ted used in the Gateau Vico.
