LEMON CHEESE
Ingredients | Method | ||
Quantites for ~ 400g. | 1. Place sugar, finely grated lemon rind, lemon juice and butter in 1.5l. bowl. | ||
150g. Sugar | 2. Microwave on high for 1½ minutes and then allow to cool. | ||
2 Lemons | 3. Whisk eggs and then add to cooled lemon mixture. | ||
75g. Butter, softened | 4. Microwave on medium power for 7-9 minutes or until thickened, beating every minute. | ||
3 Eggs | 5. Liquidise and pour into sterilised jar(s). Cover and seal. |
